Foraging for Berries

On a recent family trip to the Rockies, the boys had their first foraging experience. Foraging is a great way to get out and enjoy each other’s company, nature, and if you find some treasure along the way its that much more rewarding. It really is about the simple things in life and felt like a perfect morning. Wild raspberries are in season and they were as far as the eye could see. Every time he came across a bigger bush Hudson would yell,” Mom come look at this bush!” When kids make a connection on where their food comes from they are more likely to eat it and get excited about trying new things. Zucchini Cacio e Pepe

Eating seasonally ensures you will get the most nutrients and flavor.  While every season has its own gems, summer stands out as a front-runner. We have a little garden growing this year and luckily the grasshoppers haven’t got our zucchini yet! If you didn’t get a garden planted this year check out your local Farmer’s Market.  I made Zucchini Cacio e Pepe the other night as a side dish. It’s simple, QUICK, and soo tasty! Zucchini makes quite a bit of juice, which makes this perfect to eat raw for maximum nutrition, or you can quickly saute it. Keep in mind that quality ingredients are always important, but especially when it comes to simple dishes! Zucchini is in the top 10 of GMO crops, so Organic is the safest choice.  What are your favorite ways to use this summer staple?

Zucchini Cacio e Pepe

(adapted from It’s All Easy by Gwyneth Paltrow)

3 zucchini, spiralized

1/4 cup olive oil

1/2 cup Parmesan cheese

1/2 tsp. pepper

salt

chopped green chili (optional)

 

Toss zucchini with olive oil, salt, and pepper. Saute until desired tenderness. Remove from heat and toss with green chili and parmesan. Enjoy!

Why The Comfort Table?

My favorite piece of furniture in my house is my Mema’s table. I have so many special memories of the meals that were served and the comfort I always felt when I sat there. It was a place of safety and security. She always prepared meals so effortlessly. It seems like such a simple concept, sharing a meal with the people you love; however, it’s an art form that is quickly becoming a thing of the past. Being around the table, people share more than a meal; they share memories, feelings, and the most intimate parts of their lives. Being around the table, with the ones you love, whether that be the family God blesses you with or the family you create for yourself is one of the greatest joys in life.

I sometimes take for granted a meal that is prepared. So much goes into making food taste great, hoping somehow it might convey the love that was poured in. I take pride in what I feed my family and place a high priority on sitting at the table with them. I try my best to feed them food that heals not harms while taking into consideration where it came from. All that being said, I know the memories made are equally as important. Some people make a meal great just by being there! I hope this blog inspires you to eat more REAL food and spend more time at your comfort table.
